Vinification
Traditional, with total destemming of the bandange. Vatting lasts 3 weeks until maceration is optimised for the number of remappings. Ageing
Partially in American oak barrels for 6 months. Fresh shavings during vinification. Lovely nose of blond tobacco, with peaty notes. Silky on the palate, with a tannins.
Serve at 16-18°C with roast pigeon, duck aiguillettes with porcini mushrooms baked shoulder of suckling lamb, roast lamb chops with herbs, etc.
