Origin & Terroir
Hailing from the sun-soaked slopes of Sancerre, Les Chataigniers is planted on chalky Kimmeridgian soils, enriched by limestone and a scattering of flint. The vineyard’s gentle south-facing exposure ensures optimal ripening of the Pinot Noir, while the cool Loire breezes preserve vibrant acidity.
Vineyard Practices
Hand-harvested in early autumn, the grapes benefit from strict yield control and sustainable viticulture. No chemical herbicides are used—cover crops promote biodiversity and maintain soil health.
Winemaking Process
Whole-cluster fermentation takes place in stainless steel and small oak vats for 2–3 weeks, allowing gentle extraction of color and tannins. Malolactic fermentation is completed in French oak barrels (20% new oak) before 10 months of aging, lending subtle spice and silky texture.
