Origin and Terroir
The Menetou-Salon appellation sits on the northern flank of the Loire Valley, benefiting from a continental climate moderated by the Loire River. The limestone and clay-rich soils deliver freshness and minerality, while the south-facing slopes maximize sun exposure for the Pinot Noir vines.
Grape Variety & Winemaking
Grape Variety
Le Grand Cerf is produced exclusively from 100% Pinot Noir grapes, sourced from vines averaging 25 years of age. The old vines contribute concentrated fruit character and fine, well-integrated tannins.
Vinification & Aging
After hand-harvesting in early September, the grapes undergo a gentle maceration for 12–15 days. Fermentation takes place in temperature-controlled stainless steel vats, followed by 8 months of aging in French oak barrels (20% new), imparting subtle spice and structure.
Tasting Notes
Appearance: Deep ruby red color with purple highlights.
Aroma: Intense bouquets of wild strawberry, cherry compote, and a touch of forest floor.
Palate: Silky texture, bright acidity, fine-grained tannins, and a lingering finish with hints of clove and licorice.
Food Pairing
This Menetou-Salon AOP excels alongside roast lamb, beef bourguignon, duck confit, and semi-mature cheeses such as Camembert or Époisses. Also delightful with mushroom risotto or grilled vegetables.
Serving & Cellaring
Serve at 16–18 °C. For best expression, decant for 30 minutes. Can be enjoyed young but will gracefully evolve over 5–8 years.
