Located on the Saint-Tropez peninsula, the property was built at the time of Napoleon III. It was only in 1936 that Gabriel Farnet acquired it to found Minuty. In 1960, Monique Farnet took over the family business, with her husband Étienne Matton. Today, it is the turn of Jean-Etienne and François Matton to manage the family property. By renewing the vineyard and equipping the castle with cutting-edge technology, the current owners are continuing the production of quality wines initiated 80 years ago. Even though Minuty is primarily known for its rosés, it also stands out by offering red wines.

Vineyard

Winemaking
After the manual harvest, the grapes are sorted by hand before crushing and destemming. Subsequently, they undergo alcoholic fermentation with a first phase of 8 days at 28°C associated with numerous pumping overs. Then the must is kept for another 8 days with a single gentle daily pumping over, followed by 8 days without pumping over. After devatting, 40% of the free-run juice is aged in barrels and the rest in vats.
