Pétale de Rose Château l Evêque Rosé de Provence

Pétale de Rose

The Sumeire family acquired this large estate near Pierrefeu-du-Var in 1958, formerly the summer residence of the bishops of Toulon. An exceptional expanse of vines, stretching across 78 hectares of crystalline soils. In 1985, Régine Sumeire envisioned a paler rosé and decided to press whole-berry Grenache Noir grapes (without crushing) in a Champagne-style hydraulic press. Thus, in 1985, "Pétale de Rose" was born, the first of the light rosés from Provence. The vineyard is managed biodynamically.

Winemaking
Hand-harvested, with sorting in the vineyard. Vinification is carried out by gravity, using direct pressing without crushing, in a hydraulic press to obtain a fine and delicate rosé. Fermentation and aging take place in temperature-controlled stainless steel tanks.

Grape varieties: 42% Grenache, 35% Cinsault, 8% Rolle, 7% Mourvèdre, 3% Sémillon, 3% Cabernet Sauvignon, 2% Syrah
Soft and full-bodied
Alcohol: 13.5%

Tasting notes: Very pale, with aromas of ripe fruit, spices, turmeric, and cardamom, with hints of licorice. Full, round, and velvety, with both volume and a lovely tension.

Serving suggestions: Serve between 8-10°C as an aperitif, with savory pastries, fish, bouillabaisse, exotic and spicy dishes, salmon, summer salads, nutmeg-flavored cheese soufflé, and shellfish (lobster).
