In the Gard region of the Côtes du Rhône, Château de Montfrin spans 70 hectares of olive groves and 80 hectares of vineyards. The entire estate, situated on a terroir of rolled pebbles over clay-limestone soil, has been certified organic since 2010. This sulfite-free cuvée is inspired by a poem by Mallarmé, one of the very first typographic poems, composed in free verse, yet adhering to the strict meter of an alexandrine… This rigor is reflected in this wine. A newfound freedom, but a controlled result of great purity!
Winemaking
Fermentation takes place using indigenous yeasts, at controlled temperatures in stainless steel tanks, and without added sulfites. Aging occurs with a high CO2 level to maintain aromatic vibrancy. For this same reason, bottling takes place very early in the season.

Alcohol: 13.5%
Tasting notes: With its deep color, this vibrant, supple, and velvety wine boasts remarkable fruit purity, followed by notes of violet and crème de cassis. The palate is supple, light, and fresh.
Serving suggestion: Serve at around 15°C (59°F), with poultry, white meats, or braised red meats.
