Around the priory, whose winemaking history dates back to the 12th century, the Montézargues vineyard stretches across 34 hectares in a single block. Sheltered from the Mistral wind by the Montagne Noire, it is surrounded by grasses, holm oaks, and wild pines. The soils are particularly sandy, light, and well-drained, featuring the famous rolled pebbles.
Famous for its Tavel, the Domaine also produces a particularly luscious red wine.
Winemaking
Traditional winemaking: 15-day maceration, double extraction for recapping. Aged in tanks and demi-muids before blending and bottling before summer.

Tasting notes
Beautiful, deep, and intense ruby color. It is not overly expressive, but rather free from the typical blackcurrant notes, with hints of spice and garrigue. The palate is robust yet balanced, offering silky tannins and a beautifully fruity finish.
Serving suggestion: Serve at 15°C (59°F) with country-style terrines, grilled beef, a thyme-cured shoulder of lamb with candied thyme, a Provençal beef stew, lamb tagines, confit vegetables, and strong cheeses.
