Domaine Billard comprises 28 hectares located in the Hautes Côtes de Beaune in La Rochepot, a medieval village. The estate has been passed down through the family for four generations. Louis Billard, the founder, was also a trainer of draft horses for Burgundy winemakers. Today, his great-grandson works these plots with Rafale, the estate's Comtois draft horse, with the utmost respect for the terroir.
Winemaking
The grapes are harvested by hand, followed by destemming without crushing and sorting by gravity. Fermentation then lasts 10 days in concrete vats. This is followed by aging for 10 months, 80% in vats and 20% in barrels.
