Owned by Stephan von Neipperg, the Canon la Gaffelière vineyard covers 19.5 hectares, cultivated organically. Located at the foot of the slope south of the medieval village of Saint-Émilion, its terroir is composed of clay-limestone and clay-sand soils, which are very well-drained and very warm.
Winemaking
Vinification in wooden vats. Extraction by pneumatic punch-down. Maceration: 35 days. Aged in new oak barrels (60%), on fine lees, for 16 months. Unfined.
Tasting Notes
A precise, elegant wine, with aromas of red fruit, spices, and pencil lead. Concentrated, with a chewy texture of silky tannins. A long, saline finish.
