Château Peybonhomme-Les-Tours has belonged to the Hubert family since 1895 and for six generations. This 64-hectare estate sits on a hillside overlooking the Gironde Estuary. It has been farmed biodynamically for over 15 years.
Winemaking
The grapes are hand-sorted and 100% destemmed. No chaptalization is used; fermentation is carried out with indigenous yeasts, and maceration lasts approximately three weeks. The wine is not fined, and bottling is done according to the biodynamic calendar.
Grape Varieties: 75% Merlot, 15% Cabernet Franc, 10% Malbec
Alcohol: 14.5%
Tasting Notes
The bouquet is composed of red fruits, wild strawberry, and blackcurrant, combined with spicy notes. Elegance and delicacy prevail. The attack is direct with fruity notes, followed by a fairly tannic mid-palate and a very refined finish.
Serving suggestion
