Maison Champy - Savigny-lès-Beaune Grape variety: Pinot Noir Flavor: Light and fruity Alcohol: 13% Vineyard Maison Champy is the oldest wine house in Burgundy, founded in 1720. Its vineyards benefit from diverse exposures: south, southeast, east, and northeast, at altitudes ranging from 220 to 360 meters. The limestone soils are gravelly or stony, light, and not very fertile. Since 2005, the estate has practiced biodynamic agriculture, and in 2010, the buildings were listed as historical monuments. This Savigny-lès-Beaune is produced from the harvest of four vineyard sites: Les Bas Liards, Les Planchots, Les Fourneaux, and Les Pimentiers. Winemaking The grapes are harvested by hand, and the wine is aged in barrels, 20% of which are new. Tasting Notes This wine has a beautiful, intense, and brilliant ruby color. The nose reveals aromas of red fruits such as raspberry and strawberry. The palate is delicate and structured, with light spicy and woody notes. The finish is elegant, allowing flavors of ripe red berries to express themselves. Serving Suggestions This wine will be perfect with fine charcuterie, filet mignon, roast poultry, duck breast with blackcurrant sauce, or quail fillets with cherries, as well as with mild cheeses such as Cîteaux, Brillat-Savarin, or Mont d'Or. Serve at 15°C (59°F). |
