Domaine des Roches Neuves Saumur-Champigny is the flagship red wine of Thierry Germain’s estate in the Loire Valley, capturing the essence of Cabernet Franc from high-density plantings on tuffeau limestone and clay soils. Farming organically and practicing biodynamics, the vineyard yields low volumes of intensely flavored fruit. Grapes are hand-harvested, gently de-stemmed, and fermented with native yeasts in temperature-controlled stainless steel vats. After malolactic fermentation, the wine matures for 12–14 months in 600-liter old oak barrels, ensuring subtle oak influence and preservation of fresh fruit and mineral notes.On the nose, expect a bouquet of red cherries, wild strawberries, crushed violets, and graphite. The palate is lively and precise, with polished tannins, zesty acidity, and a saline-mineral backbone that lends remarkable length.
