Winemaking Process
Hand-harvested grapes are sorted at the cellar before gentle destemming and fermentation in stainless steel tanks. Temperature control ensures preservation of pure fruit character. After malo-lactic fermentation, the wine rests on fine lees for several months to develop texture and complexity.
