Winemaking and Aging
Hand-Harvested Gamay

Traditional Maceration
A semi-carbonic maceration over 10–12 days preserves the Gamay’s aromatic freshness while developing complexity. The wine then matures for 6–8 months in stainless steel tanks, maintaining a balance of fruit vibrancy and structural elegance.
