After a light pressing of around 4 hours, alcoholic fermentation in oak barrels at around 20°. Aged in oak barrels (10% new barrels) for 6 to 8 months. Alcohol: 13.5° Tasting: Colour: Light gold, golden. Nose: Aromas of fern, apple, honey. Palate: Fresh, beautiful nuances mineral, elegant and racy. Food/wine pairings: Crayfish, frog legs, delicate fish (red mullet, turbot), fresh goat cheese Service temperature: 10°/12° |
