Mercurey Vignes de Maillonge |
Vineyard The Michel Juillot estate extends over 31 hectares across the Côte Chalonnaise and the Côte de Beaune. Created in 1928 in Mercurey, its vines are composed of 21 hectares of Pinot Noir and 10 hectares of Chardonnay. It is a production of around twenty appellations, half of which are Premiers and Grands Crus. The Mercurey appellation, with an area of 650 hectares, offers a great richness and diversity of soil. It is thanks to this particular terroir that the wines have such a beautiful natural structure
Vinification A vinification that is as least intrusive as possible is carried out in order to preserve the seductive properties found in the estate's wines. The harvest is manual, with selection of the grapes on the sorting table then destemming. The vatting lasts 16 days, with temperature control and natural yeasts. The wine is aged for 14 months in barrels (20% of which are new barrels).
