Overview

Farming on terraced slopes ensures optimal sun exposure and drainage, producing grapes of exceptional concentration and complexity.
Tasting Profile
Color & Bouquet
This wine shows a deep ruby hue with purple glints. The nose opens with an enticing mix of blackcurrant, Morello cherry, lavender, and garrigue herbs.
Palate & Finish
On the palate, flavors of ripe plum, blackberry compote, and cracked pepper are balanced by soft, velvety tannins and a fresh acidity. The finish lingers with hints of cedar, anise, and an earthy minerality that reflects its terroir.
Terroir & Production
Vines are planted on limestone and schist soils at altitudes between 150 and 350 meters. A traditional vinification process—destemming followed by a temperature-controlled fermentation—preserves the pure fruit character. Aging for 12 months in a combination of French oak barrels and stainless-steel vats imparts complexity without overpowering the wine’s natural freshness.
Food Pairing & Serving
Serve this Minervois red at 16–18 °C. It shines alongside Mediterranean dishes such as ratatouille, confit de canard, and charcuterie boards. Bold cheeses like Roquefort or aged Comté also make ideal partners.
Aging Potential
Although approachable now, the structure and depth of the 2019 Domaine des Maels will reward cellaring for up to 8–10 years, during which tertiary notes of leather and tobacco will emerge.
