Overview
The 2016 Château Roc de Candale Saint-Emilion Grand Cru comes from a historic estate on Bordeaux’s Right Bank. Renowned for its Merlot-dominant blends, this vintage delivers a harmonious balance of fruit, structure, and aging potential.
Terroir & Winemaking
The vineyard sits on limestone and clay soils, providing excellent drainage and mineral complexity. Grapes were hand-harvested at optimal ripeness, gently destemmed, and fermented in temperature-controlled stainless steel vats. After malolactic fermentation, the wine was aged for 18 months in French oak barrels (30% new), adding subtle spice and fine-grained tannins.
Tasting Profile
On the nose, expect concentrated aromas of blackberry, black cherry, and plum, framed by notes of cocoa, cedar, and a hint of graphite. The palate is medium-full bodied, with silky tannins, bright acidity, and a core of dark fruit. The finish is long, elegant, and mineral-driven.
Food Pairing & Serving
Serve at 16–18°C in burgundy or Bordeaux-style glasses. Pair with roast lamb, beef tenderloin, mushroom risotto, or mature cheeses. Decant for 30–60 minutes to fully reveal its aromatic complexity.
