Very loamy clay-limestone, cooled by the northern winds of the Combe de Bouze... very slow maturity of the Pinot preserving the aromas of fresh red fruits (black cherry, raspberry)
Location: On a hillside south of Beaune, this 2-hectare vineyard of Domaine Chanson is located halfway up the slope, facing east.
After a very cold winter, a cold and rainy spring, the mixed and stormy summer gave way in the second half of August to very fine weather combined with high temperatures. The harvest took place at the beginning of September under a radiant sun. It should be noted that these climatic vagaries resulted in very low yields. However, meticulous vinification and careful aging give wines of great aromatic purity and very fresh. Aged in oak barrels for 15 months.
Tasting: Beautiful ruby color. Aromas of cherries, raspberry with notes of violet. Nice vanilla note. Well balanced and supple. Shiny texture. Complex on a very pure aromatic combination. Nice depth. Well-integrated oak and very ripe tannins. Beautiful length all in elegance.
Food and wine pairings: Firm-fleshed fish (John Dory) accompanied by a red wine reduction, followed by a fillet of venison and freshly pan-fried cranberries. Chocolate and nougatine dessert or morello cherry shower.
