Serve it chilled, around 8°C. It will accompany foie gras, spicy or exotic dishes, but also many dishes: southern-style tuna, monkfish with curry, bouillabaisse, cod fritters, etc. It will also pair well with medium-firm cheeses and fruit-based desserts.
