Winemaker and Vineyard
Jeff Carrel, a dynamic force in the Languedoc, sources fruit from the high-altitude sites of Côtes Catalanes IGP. The vines, some over 40 years old, yield low quantities of intensely flavored grapes.

Appearance
A deep ruby hue with purple highlights.
Aroma
Enticing aromas of wild strawberries, black cherries, licorice and Provençal garrigue.
Palate
Medium-bodied with a balanced structure: ripe red fruit core, gentle spice, peppery nuance and soft, approachable tannins. The finish is long, savory and refreshing.
Winemaking
Hand-harvested grapes undergo a gentle maceration and fermentation in temperature-controlled stainless steel tanks. A short period of oak aging adds complexity without overpowering the fruit.
Food Pairing
Perfect with grilled lamb chops, Mediterranean tapas, red meat stews, pizza or charcuterie. Also delightful on its own as an aperitif.
