History and Terroir
Les Hautes Cimes hails from the rolling limestone and clay slopes of Puisseguin Saint-Émilion, an appellation renowned for producing expressive, well-structured wines. The vineyard enjoys a south-easterly exposure, ensuring optimal ripening of Merlot and Cabernet Franc grapes amid cool nights and warm days.
Winemaking Process
Grape Selection
Harvested at peak maturity, the fruit is hand-sorted to ensure only the finest berries are vinified.
Fermentation & Aging
Fermentation takes place in temperature-controlled stainless-steel tanks, followed by 12–18 months of aging in French oak barrels (30% new) to impart structure, complexity, and gentle spice notes.
Tasting Profile
Color: Deep ruby-red with purple highlights.
Aroma: Layers of black cherry, blackberry compote, plum, and subtle cedar.
Palate: Silky tannins, balanced acidity, and a finish laced with dark chocolate, tobacco leaf, and a hint of vanilla.
Food Pairing & Serving
Ideal with grilled lamb chops, roasted duck, hearty beef stews, or aged hard cheeses. Serve at 16–18°C in large-bowled glasses to reveal its full aromatic complexity.
