Vineyard
The Raffault family has been a winegrower in Chinon on a 55-hectare property since 1693. The Cabernet Franc harvest is always carried out when it is at its most ripe; all the plots are vinified separately. The wines are aged in cellars dug into the tuffeau.
Winemaking
The soil is worked and the treatments are reasonable. After rigorous sorting and destemming, the grapes macerate for more than 15 days, accompanied by daily pumping over. Fermentation with indigenous yeasts is followed by aging on fine lees in barrels for a few months in ancient and gigantic Tuffeau quarries. This allows this wine to obtain the typicality of a Cabernet Franc from the Loire Valley, from sandy soil.
Tasting
The color is intense red, with purplish reflections. The nose is fruity, slightly spicy, with notes of ripe red fruits and hints of violet. The palate is round, with good length, combined with a nice freshness on the finish.

Service advice
This wine is ideal with cold meats, poultry, red meats or light cheeses. In addition, it is a very nice alternative to white wine to pair with salmon, tuna, shellfish in sauce. It’s a must-have for wine bars. Serve at a temperature ranging from 13 to 15°C.
