Meursault AOP White Wine - Burgundy
Domaine Caillot covers 10 hectares of Santenay in Beaune. Michel Caillot pays meticulous attention to the quality of vine management, closely following its natural cycle, from plowing and bud thinning to sustainable vineyard protection and the quality of his grapes. Similarly, in the cellar, he advocates "minimizing intervention in the winemaking process."
This Meursault is a blend from seven parcels (Chaumes de Narvaux, Vireuils Dessous, Au Moulin Landin, Pré de Manche, Malpoiriers, Durots, and Meix Chavaux).
Winemaking
Hand-harvested, with two sorting processes, both in the vineyard and at the winery. Pressing and barreling for alcoholic and malolactic fermentation, followed by aging for over 12 months before bottling.
Tasting Notes
This is a very fine wine, full-bodied, with a definite tension, lovely complexity, and a solid structure. A wine for aging that is beginning to show its best.

Serve at around 12°C (54°F), with grilled lobster, chanterelle soufflé, Parmesan risotto, trout with almonds, turbot with beurre blanc sauce, capon with cream and morels, or Époisses cheese.
