Pinot Noir Grape Variety Supple and Velvety Alcohol 13.25% Allergens: Sulfites Vineyard A family estate committed to organic farming since 1999, it was certified biodynamic in 2013. Christophe now owns 11 hectares of vines spread across the magnificent terroirs of Hunawihr and Ribeauvillé. The vines, averaging 30 years old, are planted on Muschelkalk marl-limestone soils. Vinification Ploughing and grassing are carried out on the Muschelkalk marl-limestone soil. The planting density is 5,500 vines/hectare. Harvesting is done by hand, on vines averaging 30 years old. Skin contact maceration lasts 10 days, and aging takes place for 4 months in "multi-wine barrels." Tasting Notes It has a clear, deep ruby red color. It has not been filtered, only clarified. The nose is expressive and elegant, with aromas of red fruits. On the palate, this dry wine is still in its youthful phase. The palate is very well structured, marked by melted tannins and a typically Alsatian freshness. The flavors are once again reminiscent of red fruits. Serving Advice To express its complexity, serve the wine between 12°C and 14°C with game, grilled meats, pizzas, quiches, charcuterie, tomato-based dishes, or light cheeses (cow, sheep, and goat). |
