Origin & Terroir
Location
Nestled in the rolling hills near Lagrasse, the Corbières appellation benefits from a mix of limestone, clay, and schist soils. The vineyards of Hameau des Ollieux sit at moderate elevations, ensuring optimal sun exposure and drainage.
Climate & Soil
A classic Mediterranean climate delivers hot, sunny days tempered by cooling sea breezes. This diurnal shift preserves natural acidity, while the varied soils contribute mineral complexity.
Grape Varieties
Cuvée Alice is crafted from a traditional Corbières blend: Grenache for ripe berry fruit and warmth, Syrah for depth and peppery spice, and Carignan for structure and bright acidity. Each variety is hand-harvested at peak maturity.
Tasting Notes
Color: Deep ruby with violet glints. Aroma: Intense notes of wild cherries, blackcurrant, lavender, and garrigue herbs. Palate: Succulent red and black fruit flavors framed by fine-grained tannins, with a hint of cracked pepper and saline minerality. Finish: Long, savory, and elegantly spiced.
Winemaking
Produced under organic certification, grapes are destemmed and fermented in stainless steel tanks with native yeasts. The wine matures for six months on fine lees before bottling, preserving freshness and enhancing texture.
Food Pairing & Serving
Ideal with charcuterie boards, grilled lamb, ratatouille, or aged cheeses. Serve at 16–18 °C in a large Burgundy glass to capture its aromatic intensity.
