Produced in the heart of Salento, Puglia, Borgo SanLeo Primitivo thrives on calcareous clay soils enriched by Mediterranean breezes. The vineyard slopes capture maximum sunlight, ensuring optimal ripening and concentrated grape flavors.
Grape Variety & Vinification
This wine is made exclusively from Primitivo, an ancient clone famed for its sun‐loving character. After a careful hand‐harvest in late summer, fermentation takes place in stainless steel tanks at controlled temperatures. Maceration on the skins lasts for 10–12 days to extract intense color, tannins, and aromatic compounds.
Elevage & Maturation
Following fermentation, the wine is aged for 6 months in French oak barrels, where it develops additional layers of spice, vanilla, and toasted almond notes. A further 3 months in bottle refine the texture and integrate the oak nuances.
Food Pairing & Serving
- Grilled Meats: Lamb chops, beef steaks
- Pasta: Rich ragù, lasagna al forno
- Cheese: Aged Pecorino, Parmigiano‐Reggiano
Serve at 16–18 °C in large red wine glasses to fully appreciate its aromatic complexity.
