Atama Cabernet Sauvignon is crafted in the heart of Chile’s Colchagua Valley, where volcanic soils and a Pacific breeze create optimal growing conditions. This wine expresses intense dark fruit aromas, precise structure and a silky mouthfeel—an exemplary representation of New World Cabernet Sauvignon.
Terroir & Winemaking
Vineyard
The grapes come from sustainably managed vineyards at 400–600 meters above sea level. Cool nights and warm days ensure slow phenolic ripening, allowing the fruit to develop deep color and concentrated flavors.
Harvest & Fermentation
Harvest takes place in the cool early mornings to preserve freshness. Yeast fermentation occurs in stainless steel tanks with controlled temperatures (25–28°C) for 10–12 days, followed by malolactic conversion and 12 months of aging in French oak barrels.
Tasting Notes
Appearance: Deep ruby red with purple highlights.
Nose: Aromas of blackcurrant, dark cherry, cocoa nib and a hint of cedar.
Palate: Medium to full-bodied, with ripe tannins, flavors of plum, blackberry and baking spices, leading to a long, elegant finish.
Food Pairing
This Cabernet Sauvignon excels alongside grilled rib-eye steak, rosemary-roasted lamb and mature hard cheeses. For a lighter match, try it with mushroom risotto or aged charcuterie.
Serving & Storage
Serve at 16–18°C. Decant for 30 minutes to reveal its full aromatic spectrum. Store bottles horizontally in a cool, dark place (12–14°C) for up to 8 years.
