Vineyard & Terroir
Nestled in the foothills of the Massif Central, the Saint-Chinian AOP benefits from a Mediterranean climate, cooling northern breezes, and varied soils of schist, limestone, and clay. These conditions impart structure, minerality, and aromatic intensity to the grapes.
Grape Varieties & Viticulture
This cuvée blends Syrah (40%), Grenache (35%), and Mourvèdre (25%). The vines, averaging 25 years of age, are cultivated using sustainable practices, with hand-harvesting ensuring optimal ripeness and grape integrity.
Winemaking & Ageing
Fermentation takes place in temperature-controlled stainless steel vats, followed by malolactic fermentation in oak barrels. The wine matures for 8 months in a combination of French oak barrels (30% new) and amphorae, preserving fresh fruit while adding subtle spice and structure.

Appearance
Deep ruby red with violet highlights, indicating youthful vigour.
Aroma
Intense aromas of black cherry, ripe plum, wild herbs (garrigue), black pepper, and a touch of leather.
Palate
Rich, full-bodied, with silky tannins and well-balanced acidity. Flavours of dark berries, liquorice, and earthy notes unfold, leading to a long, savory finish.
Food Pairing & Serving
Pairs perfectly with roasted lamb, duck confit, cassoulet, and mature cheeses. Serve at 16–18°C, decanting for 30 minutes to fully reveal its aromatic layers.
